Today I'd like to share with you another recipe from my diet routine... I've always thought that watching your calorie intake shouldn't take away from the pleasure of eating delicious food. After all, it's not all spinach and water! My dream is to compile all the diet recipes I have learnt and invented over the years of modeling and the need to stay in shape. It just seems that dieting is such a struggle and you'd never be able to stick to it unless you were all alone on a desert island. In reality, many low-calorie dishes could be made with the ingredients we have at hand and would still be very tasty... Good flavor is a very important element in any eating habit we want to introduce into our lives, especially when it comes to something as ambiguous as dieting.

And let's not forget the colors! The vibrancy on the plate awakens our curiosity, and when I served this dish with its bright green cucumber salad, I thought of spring, which is just around the corner.


INGREDIENTS:

  • 3 chicken breasts

  • 2 tbsp olive oil

  • 1/8 cup / 2 tbsp brown sugar

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1 tsp sweet paprika

  • 1 tsp dried oregano

  • 1/2 tsp cumin

  • 1/8 tsp cayenne pepper (optional)

  • 1 tsp salt

  • 1/2 tsp black pepper

  • Dill or parsley (optional)

For the cucumber salad:

  • 2 cucumbers, thinly sliced

  • 1/4 purple onion, thinly sliced

  • For the dressing

  • 1/8 cup white wine vinegar

  • 1 teaspoon honey or agave nectar

  • 1 tbsp chopped fresh dill

  • 1/2 teaspoon salt

  • 1/2 tsp black pepper

  • Dill or parsley (optional)

Kitchen utensils: Mallet or rolling pin for pounding the chicken (optional), cling film or plastic bag (optional), baking dish or tray, large salad bowl, chopping board and knife.
