Better than Fries 🍟😋 Crispy, delicious and very easy!

I think most people who like to cook have asked themselves this question at least once: will I ever be able to make homemade chips as good and crispy as the ones you get with takeaway burgers? Then you do the research and realize that it's quite a complicated process: you have to boil the chips first, dip them in oil at a certain temperature for a certain amount of time, strain them, fry them again... and all of this seems to require a special deep fryer that can keep the temperature at a certain level, which you don't have at home.
However, once I took up the challenge, used a kitchen thermometer and a simple frying pan. The potatoes survived the first fry. But when I took them back for the second round, there was a knock at the door...
It was a courier with a parcel that wasn't addressed to us, even though the address was the same. By the time we checked the parcel number and realized it was the right address indeed, just in a different town, a good 10 minutes had passed. By the time I got back to the kitchen, the chips had turned black and there was a lot of smoke rising from the surface of the oil. They were very crispy, but inedible... I wonder how they didn't catch fire!
After this somewhat traumatic experience, I found another (much easier) way to make chips. Crispness and flavor are guaranteed... It still involves frying in lots of oil – not twice, just once. So when the couriers knock on your door – do turn off the stove.

INGREDIENTS:
4 medium potatoes, peeled
2 eggs
1/2 cup / 65g all-purpose flour
2 ½ - 3 cups frying oil
SPICES:
1/2 tsp salt
1 tsp chilli powder
1/2 tsp oregano
1/2 tsp garlic powder
DIP SAUCE (OPTIONAL):
1 small shallot
1 tbsp capers
chives (optional)
2 tbsp mayonnaise
1 tbsp ketchup
1 tsp Sriracha
Black pepper
Kitchen utensils: a large bowl, a smaller bowl for the dip, a sieve or a strainer, kitchen tweezers, a spatula, a frying pan deep enough to fit 3 cups of oil, a cutting board and a knife.
