Easy Homemade Meatloaf Recipe

The festive season is upon us and we are all starting to think about our menus for family gatherings, Christmas parties with colleagues and friends, cosy evenings by the fireplace and grand celebrations… We all dream of the turkey and seven fishes, while the French – about the oysters and the foie-gras. For those in charge of cooking at home, the holidays can get a bit exhausting, with so many people to feed. As a French chef friend of mine once said, "Christmas isn't the time for professional chefs. You come home late at night after a busy Christmas shift, when everyone is asleep, all the chocolate boxes have been opened, all the foie gras has been eaten and there is a half-dead oyster lying down for you in the sink".
This is a recipe to have on hand if you have to cook for a lot of people and don't want to spend all day in the kitchen.
Basically it has five steps: mix, glaze, forget in the oven for an hour, glaze again and bake again. An easy ride that gives you plenty of time to spend with your guests and the family.
Kitchen utensils: An overproof loaf tin (dimensions: 10" x 5 3/4" x 3 1/4" high / 25cm x 15cm x 8cm), a kitchen brush or a spatula, a cutting board and a knife, a cheese grater, a microplane (a zester) or the finest holes of a box grater.
