“Lazy” burgers with cabbage

My sons love tennis and train several times a week. They actually call these "lazy" burgers "tennis balls" because of the distant resemblance... This dish was very popular in my kindergarten and then in my primary school canteen, while my grandmother used to call these burgers "lazy" because they are almost effortless to make. But lazy or not, the cabbage in the mince gives such a softness to the texture, and the taste sends me back to the days I barely remember - only the glimpses, only the good stuff, like feeling loved, being curious and exploratory, wondering about so many things I had yet to learn.

When I was about 6 years old, I had to spend a few weeks of my summer holidays in the countryside with my grandparents. It was a tiny village with lots of orchards and small farms. Together with the other children we loved to play hide and seek - the boundaries of the hiding area were the whole village, the possibilities were endless. But as most of the other children were a bit older than me, they always found me pretty quickly... Once, however, I found a very unusual hiding spot: while the seekers were counting, I ran desperately and suddenly found myself in a small barn, which we shared with a friendly ginger cow. No one could crack this hiding place for several days. That's how I mastered my hide-and-seek skills!

Ingredients:

  • 450g (1 lb) ground beef

  • 1 egg

  • 1 small onion, grated

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon garlic powder

  • 1/2 tsp smoked paprika

  • 250g (½ lb) cabbage, finely chopped

  • ½ tablespoon beef tallow, butter, or olive oil

  • 170g (6 oz) cheddar or Gruyère cheese, grated

  • 2 tablespoons mayonnaise

  • Fresh parsley, for garnish (optional)

Kitchen utensils: baking tray, large bowl, chopping board, spatula, knife, box grater.
