Have you ever heard of Bisquick? I was familiar with it when I was a kid in Eastern Europe, thanks to the TV commercials... some kind of super powder that makes baking almost instantaneous and "impossibly easy".
When I started reading about Bisquick, I found a story (or rather a legend) about how it was invented. A salesman for General Mills, an American food manufacturer, was traveling by train sometime in the 1930s. He was served freshly baked biscuits with his coffee. Greatly impressed by them, he asked to speak to a chef and asked for the recipe. The chef revealed that the secret lay in the batter he prepared beforehand: flour, salt, lard, and baking powder were mixed together prior to the trip, kept in ice, and allowed him to bake the biscuits fresh on the train. It was a revelation for the sales rep, and soon the Bisquick mix was in stores all over the United States before it reached Europe.
Since lard, like any other fat, requires a lot of chemicals to dehydrate and then store for a long time, I make my own Bisquick mix from just flour, salt, baking powder and butter and just keep it in the freezer. Baking then becomes a very smooth process, like this Cheeseburger cake!
Ingredients:
1lb (450g) beef mince (around 7% fat)
2 shallots
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon taco seasoning
1 cup (120g) freshly grated cheddar cheese
Biscuit Batter:
½ cup Bisquick Original Pancake & Baking Mix
2 large eggs
1 cup whole milk (240ml)
Or my own Biscuit mix:
½ cup (65g) all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
2 tablespoons cold butter
2 large eggs
½ cup (120ml) whole milk
Kitchen utensils: Frying pan, chopping board, knife, cheese grater, spatula, 9-inch pie dish, large bowl, whisk.
