Easy Ground Beef Stir Fry with Summer Vegetables
I came up with this recipe while experimenting with Asian sauces..
Some time ago, I came across a recipe for a so-called "tomato" sauce in one of the culinary books that contains about five or six other vegetables, such as bell peppers, celery, spinach and broccoli. The idea was to get children to eat more vegetables by disguising them in a tomato sauce that they usually love. "What a genius idea!" I thought. Even though my boys know the importance of vegetables and fresh herbs, and they aren't really picky, I know how hard it is for many of my friends whose kids refuse to eat anything with a hint of green. This is mostly because vegetables are considered boring when they can actually be delicious if cooked properly. I came up with this recipe while experimenting with Asian sauces, adding beef mince to make it even more appealing. Although this dish is called "ground beef stir-fry with summer vegetables", it's essentially al dente summer vegetables stir-fried with minced beef.
Ingredients:
STIR FRY:
1 lb (450g) ground beef
2 garlic cloves
1 tbsp peanut (or any other vegetable) oil
1/2 onion
2 carrots
2 bell peppers (green, red)
100g snow peas
handful bok choy
Scallion
SAUCE:
2 tbsp cornstarch
2 tbsp water
3 tbsp soy sauce
1.5 tbsp oyster sauce
2 tbsp Chinese cooking wine
1 tsp sugar
1/2 tsp black pepper
Kitchen utensils: frying pan, chopping board, knife, spatula and a small bowl or jar for the sauce.
