EASY AND DELICIOUS SALMON FLORENTINE 😋

Have you ever heard of a dish called eggs Florentine? It is basically a poached egg on a bed of spinach, served with toast and a little cheese. When I did research into the origins of the name "Florentine", I made a curious discovery – apparently in the French culinary vocabulary, everything served on a bed of spinach is called Florentine, whether it is chicken, eggs or ham. Florentine equals spinach. This is because the love of spinach was introduced into French cuisine by Queen Catherine De Medici, who was originally from Florence, Italy. Along with many techniques, utensils and ingredients, she brought spinach from Italy to France.
That's how I discovered that one of my favorite recipes for salmon for lunch or dinner could actually be called 'Salmon Florentine'. It is a very simple and delicious way to cook salmon, full of good proteins and fats, enough to fill me up after a hard day's work!
Ingredients:
4 salmon fillets
Season with salt and black pepper
2 tbsp olive oil
1 shallot
2 garlic cloves
1 cup cherry tomatoes
1/4 teaspoons red pepper flakes
1 1/2 cup (340ml) heavy cream
Handful of parsley
4 oz (115g) Parmesan
10oz (280g) Spinach
Utensils: Frying pan, spatula, chopping board and knife, cheese grater.
