🧀 Cheesy Tortilla & Egg Wraps - So Delicious 😋
Have you ever had that moment — a wow moment?...
Have you ever had that moment — a wow moment — when you see someone combine two simple ingredients that you always have in your fridge and cupboard, and you’ve never thought of pairing them before? That’s how the French must have come up with the idea for mayonnaise, “What will happen if we whisk an egg yolk with a little oil? Oh là là! L’émulsion! Magnifique!”
But this recipe is much simpler. Yet, it still leaves me in awe, wondering how many more unordinary and delicious combinations there are to be discovered in the world of food!
Some time ago I had a friend over after a shopping trip. She offered to make us a quick lunch and did something rather unusual with the tortillas. First, she dipped the tortilla in water and then poured a whisked egg over it. And that’s how I learned what happens…
When the Tortilla meets the Omelette…
…and they create a delicious ensemble for breakfast, brunch or even light dinner. While the classic omelette could be a little too soft and the tortilla a little too dry — their combination solves these problems, just like good, long-lasting friendships.
We like to experiment in our family. Especially when it comes to different fillings for wraps. We have tried these tortillas with Christmas turkey leftovers and crispy Romano lettuce leaves. With Gorgonzola and slightly caramelized red onions. With crispy bacon and roasted bell peppers… The result is always good!
Ingredients:
🌯 1 tortilla
🥚 1 egg
🧀 1 cup (120g) Gruyère cheese
🌶️✨ Red pepper flakes (optional)
Filling Example:
🍅 4 cherry tomatoes or 1 big tomato
🧀 1 ounce (28 g) Feta cheese
🫒 4 olives
🌿 Basil
🍴 Kitchen utensils: a medium bowl; a frying pan; a kitchen brush or a spoon; a spatula; a cutting board; a knife.
Method:
Lightly beat an egg in a bowl and grate 1 сup (120g) of Gruyère cheese.
Prepare the filling ingredients: cut 4 cherry tomatoes into pieces (or one large tomato into cubes), 1 ounce (28 g) of feta cheese, slice 4 olives and finely chop the basil.
Place your frying pan on a very, very low heat.
Give your tortilla a little bath in cold water, just by dipping it in — it doesn’t need to soak there for a while. The water plays two roles here: it prevents the tortilla from burning on the pan; and it forms a soft emulsion with the egg, helping them to stick together.
Place the wet tortilla on the frying pan and using a kitchen brush, spatula, or spoon, spread half of the beaten egg evenly over the surface.
Sprinkle with half of the grated cheese (60g or ½ cup) and let it cook for one minute.
Flip the tortilla and repeat on the other side. Brush with the remaining egg mixture and sprinkle with the remaining Gruyère cheese.
Place the prepared filling in the center of the tortilla. Gently fold it: first the sides, then the smaller edges.
Flip again, cook for another half a minute. Sprinkle with red pepper flakes (optional), then add a final touch of crumbled feta cheese and basil. Serve immediately — and enjoy!

🌯 The Fillings:
As I mentioned above, we tried these tortilla-omelette hybrids with so many different things inside… It would be easier to list what we didn’t try with than to list all the possible options!
🍛 Chicken curry and broccoli.
🍖 Ham and more, more cheese — 🧀 Cheddar, Parmesan, Gruyere etc. — either one of them or all of them for cheese lovers.
🐟 Smoked salmon, 🥑 avocado, 🌿 dill and 🥛 sour cream.
🥗 Watercress, grilled aubergine 🍆 and leftover steak 🥩 cut in strips.
🌱 Rucola, cottage cheese 🧀 and fresh marjoram… To name just a few!
🥗 The Garnishes:
We usually serve it with a simple salad 🥗. But if you want to host a special tortilla dinner, make a plato of roasted vegetables 🥕🍆🌽, ratatouille 🍅 or caponata. Or you can use the tortillas themselves 🌯 as a side dish — just imagine serving them for a chicken roast 🍗 on a Sunday afternoon…
🧑🍳 The Preps:
This may seem like a wild idea, but it actually works. Make these tortillas (with whatever fillings you want) before your BBQ party and just heat them on a grill 🔥. Be careful with the heat though — it should still be relatively low. Surprise your vegetarian friends 🌱 with their own veggie option made from scratch, instead of the ready-made pulled-oat/soy hotdogs and burgers. 🍔🌭
Substitutions:
🌾 Gluten-free:
Just use gluten-free tortillas 🌯.
Alternatively, you could make your own flaxseed tortillas 🌿 yourself. Would you like me to share the recipe with you? It isn’t difficult at all, but might be a bit time-consuming. ⏳
🥛 Dairy-free:
Replace the cheese 🧀 with silken tofu, 1 cup, the same amount. Strain it through a sieve 🥣 to remove the extra liquid and grate it.
🌶️ Red pepper flakes, and other spices:
As we all know, a beaten egg 🥚 has countless possibilities. Add a bit of smoked paprika 🌶️ and you’ll get a little hint of smokiness as well as the reddish colour. Dried turmeric 🌕 will turn your tortillas golden — and oh so healthy. 🌟 Province herbs 🌿 would teleport you to the south of France 🇫🇷. Although I love them as they are — au naturel, — there is always room for creativity. 🎨

We loved this idea when we first saw it from you! Dawn and I make a lot of omelettes and frittatas, because they have good fats and protein, but you can easily keep the carbs low. The addition of a low carb tortilla can help you feel sated without unnecessary carbs.
