Do you like cabbage as much as I do? A cheap, accessible ingredient, available in most parts of the world, yet the creativity never ceases to make something new and interesting with it. In one of the comments to the video recipe, someone called this dish a “cabbage quiche”. And it indeed resembles one, only with no pastry, which makes it a “guiltless cabbage quiche”, considering those who are on the diet and watch their calories intake.
A few times we had “The Hobbit” situations:
when all at once we had many unexpected guests at our home… A couple of months ago I was expecting my friend from the tennis club to come over for lunch. She called half an hour before the arrival and said that our couch would perhaps be joining her. But then the couch called and asked if it was okay to bring another four hungry couches. Since I didn’t have enough steaks for the whole gang, I quickly made this cabbage and eggs bake and served it with a simple cucumber salad. It was a win! Not the Wimbledon one yet, but I’m still working on my drop shot...
INGREDIENTS:
2 tbsp Olive oil
1 medium Onion, cut in cubes
1 Carrot, grated
2 lb/900g cabbage, cut finely
5-6 Eggs
1 tbsp All purpose Flour (optional)
Manchego cheese, grated (optional)
Fresh parsley, finely chopped (optional)
Salt and black pepper
1/2 tsp Oregano
1/2 tsp Sweet Paprika
1/2 tsp Garlic powder
1/2 tsp Onion powder
1/2 tsp Dry Parsley
Kitchen utensils: 2 frying pans to avoid making dishes simultaneously – one should be suitable for an oven, a large bowl, a spatula, a cheese grater or a box grater, a cutting board and a knife.
Method:
Cut 1 medium onion in cubes.
Heat a frying pan with 1 tablespoon of olive oil over a medium heat. Add the onions first. Fry them for about 5 minutes until they turn golden.
