My mum loves gardening and knows so much about the botanical world. We used to have a garden at our country-side cottage where she grew carrots, garlic, parsley, dill, rosemary, apples, pears, plums, cherries, courgettes, pumpkins, strawberries, gooseberries, blackcurrants, redcurrants, cucumbers and tomatoes in the greenhouse – and the list goes on and on. But the most beautiful part of the garden was

the flowers… When the flowering season was almost over, at the end of September, it was the time for her favorite dahlias to be in bloom. Do you know dahlias? Those bright big flowers that look like pink, orange, yellow, purple balloons from a distance. As far as my memory goes, they were always the last ones to bloom and stayed for a while, until the frost came.

Why am I talking about flowers here, dahlias in particular? After we posted the video with this dish, my mum rang me and said that this dish looked exactly like one. Even the colors are reminiscent.


Ingredients:

  • 3-4 Sweet potatoes, as evenly shaped as possible

  • 2 tbsp Butter, melted

  • Salt, Black pepper

  • 1 garlic clove, cut in thin slices

  • Thyme

  • 1/2 cup / 45g Parmesan cheese, grated  

Kitchen utensils: A large baking tray at least 7 ½ cm (3 inches) tall; a large bowl; a cutting board and a knife; a little pot or a bowl to melt the butter.
