After the Christmas and New Year holidays, we often feel like going on a diet. We may have made some resolutions to eat healthier, to eat less, but how do we stick to them? Food has always been my passion and I can't imagine myself eating two slices of cucumber and a tasteless chicken breast when I feel like losing a bit of weight after the glorious, delicious festive season. That's why, over time, I've collected a few healthy recipes that are low in calories, but still super tasty and full of good fats, proteins and vitamins to revitalise our bodies.

This simple salmon marinade can be made with a variety of spices and herbs. I once tried it with ground cardamom and it was delicious. I often adjust the spices according to my mood - if it feels like cardamom, it feels like cardamom! And if it's cumin, it's cumin... Les Herbes de Provence is a universal blend that many people love, so I've used it in this recipe to make it work for everyone. This recipe is also very quick to prepare for your dinner or lunch.


INGREDIENTS:

  • 4 salmon fillets

  • Zest of 1 lemon

  • Juice of 1/2 lemon

  • 2 tbsp extra virgin olive oil

  • 2 garlic cloves, grated

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp Herbes de Provence

For sautéed Green Beans:

  • 450g (16 oz) green beans

  • 1 tsp salt

  • 1/2 tbsp olive oil

  • 1 tbsp butter

  • 4 garlic cloves

  • 1/2 tsp salt

  • 1/2 tsp black pepper

Kitchen utensils: oven dish or baking mould, bowl, frying pan, large saucepan, chopping board, knife, zester or fine grater.
